It undergoes an intramolecular reaction of dehydration at 170 degrees under the influence of acid catalysts like concentrated sulfuric or phosphoric acids. This produces a mixture consisting of 3-octene, and 2-octene. These olefins are useful raw materials in the production of agricultural intermediates and polymer monomers. They can also be converted into heptane by hydrogenation or epoxy compounds by epoxidation. This ketone is not only an important precursor in the synthesis antifungal drugs but it can also be used as a base for ester fragrances. It also undergoes an esterification reaction under the catalysis of concentrated sulfuric acids with carboxylic acid such as acetic and stearic acids, producing 3-heptyl-acetate, which has a fruity scent, that can be used directly for spice blends. Due to its high thermal stability and good lubricity, 3-Heptanol Stearic Acid is used in the plastics industry as a metal processing lubricant and plasticizer.
Due to its combination with polar (provided by the hydroxyl groups), and nonpolar characteristics, 3-Heptanol is soluble in both polar and a non-polar substance.
