Lauraldehyde is also known as Dodecyl Aldehyde. It’s a colorless liquid that has a leaf-shaped crystal. After oxidation, it produces lauric acid. It is found in natural essential oils like lemon oil, lime and rue. Lauraldehyde is oily and has an aroma of aldehyde. It has a floral and citrus scent. In small quantities, it can be added to floral flavors like lily-of-the valley, orange blossom and violet. It can be used in edible flavors to make fruity flavors like banana, citrus and mixed fruits.
Dodecyl Aldehyde, a liquid oily colorless to yellowish-white that solidifies when cooled down, is an oleophilic liquid. It has a strong, fatty smell and an aroma that is similar to orange oil or pine needle oil. It is unstable both in acidic media and alkaline. Boiling point 237degC, melting point 11degC, flash point 82degC. It is soluble with ethanol, mineral oils and non-volatile oil. Propylene glycol can make it turbid, but glycerin, water and glycerin do not. Lemon oil, white lime, sweet orange, rue, and fir oils are all natural products.
