Ethyl Caprylate, a transparent colorless liquid with a sweet, pineapple-like aroma, is usually colorless. The boiling point of ethyl caprylate is 208.5. It is not soluble in water but is soluble in ethanol and ether. Propylene glycol, however, is almost insoluble. It is a mixture that forms azeotrope with water. The content at the azeotrope point of 98.25 is 18%. The mixture is produced by heating caprylic and ethanol with a small quantity of concentrated sulfuric acids. It is used to flavor orange, strawberry and pineapple. Ethyl Caprylate can be used as a food flavoring according to GB2760-9. It is used to flavor milk, cheeses, apple and pineapple wines, brandys, rums, etc. Esterification of caprylic and ethanol produces it.
