Furanone has the chemical formula C6H8O3. The solid is white to light yellow and has a rich aroma of jam, fruit and caramel. After dilution, it takes on a raspberry scent. The aroma is especially strong in weak acids and it is easily oxidized. This is why the product is often stored and diluted with propylene glycol.
