Hydrogenated cinnamic acid is an important aromatic carboxylic acid compound, which consists of a benzene ring and a propionic acid group directly connected by a saturated carbon chain. As a complete hydrogenated product of cinnamic acid, it loses the original double bond conjugation system, but retains the aromatic property of benzene ring and the reactivity of carboxyl group. It is usually a white to off-white crystalline powder with a slight sweet taste.
The carboxyl group (pKa≈4.9) of hydrogenated cinnamic acid makes it a typical organic acid, which can participate in salt formation, esterification and other reactions. The electronic effects of the benzene ring affect the reactivity of the carboxyl group.Its saturated propyl chain, as compared to cinnamic acid, increases the molecule’s thermal stability (melting point of roughly 46–48 °C) and decreases photosensitivity, making it more appropriate for industrial settings where stability is needed. Although this chemical is stable at room temperature, it should not come into touch with strong oxidants.
