Ionone, a terpene compound, has three isomers depending on the position of its double bond. Viola sinensis, a different species of Viola, is sometimes mistranslated in Chinese as Violet. Ionone, on the other hand, is frequently translated as ionone.
Three isomers are most common, A and B. A: Colorless liquid to light yellow. Boiling point: 237; relative density: 0.927-0.933; refractive index: 1.497-1.501; flash point >100. Soluble in three volumes of 70% ethanol or oils. B: Light yellow to colorless liquid with boiling point of 239, relative densities 0.941-0.947 and refractive indexes 1.5190-1.5215. It has a sweet floral and woody scent with cream and fruity aroma. The aroma is strong and long-lasting. The second position’s aroma is less sweet than the first, but has a stronger cream and fruity scent. The first and second position have a sweet, woody taste, with a fruity, slightly bitter aroma. Later, they develop an aroma of woods and flowers.

Ionone is a compound that has many pharmacological properties, such as anticancer, cancer prevention, cancer promotion and melanogenesis. It also has anti-inflammatory, antibacterial, and anti-inflammatory effects.
1. OR51E2 activation has a regulatory effect
Studies have shown that OR51E2 is activated by b-ionone to inhibit melanocyte migration and proliferation, and induce melanogenesis. OR51E2 can also be activated by b-ionone to increase proliferation and metastasis in retinal pigment cells, and activate AKT and p44/42 proteins.
The activation of OR51E2 leads to a regulation of kinase activities and an increase in intracellular calcium ions. Further experiments showed that ionone exerts its antiproliferative effect by phosphorylating the p38, and Stress-Activated Protein Kinase/Jun Amino-Terminal Kinase/SAPK/JNK which are members of Mitogen-Activated Protein Kinase family (MAPK). A second study showed that b-ionone inhibited the proliferation of breast tumor cells by regulating MAPK.
2. Cell cycle regulatory proteins mediate effects
Ionone inhibits the proliferation of breast and prostate cancers, as well as human colon cancer and human gastric cancer cell lines, and breast cancer adenocarcinoma cells in vivo, by causing cell cycle arrest. This compound inhibits cell proliferation in a number of ways. It can arrest the cell cycle during the G1/G0 phases of breast cancer cells, human colon cancer, prostate cancer (DU145 and PC-3 cells), the G1/G0 phases of human gastric carcinoma and breast cancer, and at the G1/G0 stages of human gastric and breast cancer.
3. Apoptosis: Its effects
Ionone induces apoptosis by inducing it in breast cancer, breast cancer adenocarcinoma, and leukemia cell lines as well as human gastric cancer adenocarcinoma. Apoptosis can be achieved by decreasing the expression level of anti-apoptotic Bcl-2, and increasing that of pro-apoptotic Bax. Ionone increased expression of caspase-3 cleaved in human gastric cancer cell lines and breast cancer cells. It is believed that b-ionone acts on p53 at early stages of liver cancer. The apoptosis inducing effects of ionone were previously shown to be independent from mutant p53 functions.
