Methyl maltol, also known as maltol, has a chemical name of 3-hydroxy-2-methyl-4H-pyrone, a relative molecular mass of 126.11, white needle-shaped crystals or white crystalline powder, and a melting point of 160~164 . Maltol can be found in ferns and larch leaves. It is also present in cereals, bread crust, caramel, roasted beans, cocoa and coffee.
It is a liquid that has the same smell as caramel. The dilute solution of maltol has a strawberry scent. It sublimates when heated to 90 degrees, and the threshold is 0.03%.
It is acidic and turns purple-red upon contact with ferric chloride. The aqueous solution of maltol has an aroma similar to candied fruits, while its diluted solution has a faint strawberry scent. Maltol enhances aromas better under acidic conditions. The aroma weakens as the pH value increases; in alkaline conditions the aroma is greatly weakened.
