Menthone is a terpene compound with the chemical name of 5-methyl-2-isopropylcyclohexanone and the molecular formula of C10H18O. It is a monocyclic monoterpene. Its molecular composition is a six-membered, cyclohexanone with isopropyl and methyl substituents. There are two types of isomers: cis, and trans. Trans-menthone occurs more often in natural products. At room temperature the compound appears as a yellowish liquid with a minty aroma. It is easily soluble with organic solvents like ethanol and water, but not very soluble.
From the perspective of physical and chemical properties, the cyclohexanone structure of menthone gives it the typical properties of carbonyl compounds, which can undergo addition, oxidation, reduction and other reactions, such as nucleophilic addition reaction with sodium bisulfite, or reduction to menthol under the action of a reducing agent.
