Basic Info
Span is an emulsifier that is nonionic and synthetic. It is produced by the partial esterification sorbitol, sorbitan or food-grade palmitic acids. The emulsifier is a light yellow to brownish yellow, in the form fine beads, hard waxy particles or flakes, with a caramel-like sweetness and smelling of soft grease. Span-85, which is a mixture, contains sorbitol trioleate, a compound that has a similar composition. It is the most lipophilic compound because it has a low viscosity, the lowest HLB value and the lowest viscosity. It is a good emulsifier of water in oil (w/O), and it can also be used as an auxiliary for O/w type.
