Vanillin (CAS 121-33-5): Quality Sourcing Guide for Flavor and Fragrance Applications
The COA That Passed, The Batch That Failed
A flavor house in the Netherlands was qualifying a new supplier for Vanillin (CAS 121-33-5). GC purity: 99.2%. Refractive index: within spec. Color: essentially water-white. Everything on paper looked correct.
Sensory evaluation: failed. The perfumer identified a green, slightly metallic off-note that wasn’t in the reference. GC-MS found a trace aldehyde impurity at 0.08% — far below the analytical detection threshold for routine QC, but above the human olfactory threshold for that specific compound.
Analytical data and sensory data measure different things. For flavor and fragrance work, both matter.
What 'High Purity' Actually Means for F&F Compounds
The fragrance and flavor industry has its own quality language. IFRA compliance, FEMA GRAS status, natural vs. synthetic origin declaration, kosher/halal certification for some markets — these are all separate from purity percentage.
Vanillin as a raw material for F&F applications requires at minimum: GC purity with impurity identification, odor description and evaluation vs. reference, refractive index, specific gravity, and flash point.
If you’re supplying to major fragrance houses or food ingredient buyers, you’ll also need lot traceability, allergen declarations, and in some cases product liability coverage.
Storage and Stability of Vanillin
Aldehydes oxidize. Ketones can polymerize under some conditions. Both processes degrade quality over time.
Vanillin should be stored in tightly sealed containers, away from heat and light, under inert atmosphere for sensitive applications. Once opened, reseal immediately and track the remaining quantity.
A faint off-odor developing over time is usually the first sign of oxidation. If you notice it, run a GC before using the remaining material in a production batch.

ZhishangChem F&F Grade Supply
Shandong ZhishangChem produces Vanillin for flavor and fragrance applications with GC purity testing, refractive index measurement, and appearance verification on each commercial batch.
Packaging: amber glass bottles for small orders, with nitrogen headspace for batches going to sensitive applications. Bulk supply in appropriate closed containers.
Standard documentation: CoA with full analytical data, GHS SDS, and origin documentation. Technical queries welcome.
