Phenylacetaldehyde Dimethylacetal (CAS No. 101-48-4 is an aromatic acetal with the molecular formula C10H14O2 as well as a molecular mass of 166.22g/mol. The acetalization of two molecules of methanol and the aldehyde groups of phenylacetaldehyde forms its structure. Its chemical stability (not easily polymerized or oxidized) is much higher than free phenylacetaldehyde. At room temperature the compound is a transparent and colorless liquid with a floral and green fragrance (similar to rose and hyacinth) and a sweet, mellow and fruity base. The boiling point of the compound is approximately 220degC. It is insoluble in water but readily soluble in oils and organic solvents like ethanol. Under acidic conditions, phenylacetaldehyde is hydrolyzed. Its “slow release” property is a valuable asset in the fragrance industry.
