Glutathione, a tripeptide formed from glutamic acid and cysteine by peptide bond condensing, is a tripeptide. It is the main low-molecular-weight thiol in mammalian cell anti-oxidative stress. It was first discovered in 1921, and its chemical structure determined in 1930. Dr. Al Mindel is a famous American nutritionist and health expert. He called glutathione an amino acid that was triple effective in preventing aging. Also known as the master antioxidant of nature, glutathione is a powerful anti-aging amino acid. It appears as transparent, colorless, elongated crystals. It is soluble only in water, dilute ethanol, liquid ammonia and dimethylformamide. The properties of glutathione are stable in solid form, but its aqueous solutions can easily be oxidized by air to produce oxidized glutathione. The presence of glutathione is found in many foods, including baker’s yeast, wheat germs, chicken and pig livers, pineapples, cucumbers, tomatoes, and wheat germs. Wheat germ and animal blood have the highest levels, ranging from 100-1000mg/100g. Glutathione is anti-oxidant, it scavenges free radicals and detoxifies, enhances immunity, delays aging, fights cancer, and protects against radiation hazards. It helps white blood cell kill bacteria and also prevents the oxidation and formation of cataracts and stroke. It also binds carcinogens, and excretes them from the body via urine.
